“A Tribute to High-End Mexican Cuisine”

1. Mamá Rosa Restaurant, which is located in the city’s downtown/Centro district, is a paradise of Mexican cuisine; the name is owed to Mrs. Rosaura Altamirano, who the entire world lovingly refers to as Mamá Rosa. One of her daughters, Mrs. Ana Jaime, opened the establishment 6 years ago. The first Mamá Rosa restaurant was opened in Tepic, Nayarit with the vision of offering dishes made from the original recipes of her mother.

Three and a half years ago, Chef Sergio Miramontes decided to open a Mamá Rosa restaurant in Puerto Vallarta, and began offering the same dishes as a gesture of tribute to high-end Mexican cuisine, but continued to preserve and use the basic Mexican ingredients which gave Mamá Rosa the fame of a great cook.

3. For breakfast, Chef Miramontes and his kitchen team prepare some of the most traditional Mexican dishes such as: chilaquiles, meat and chili stew, pork skins in green sauce, potatoes and bacon and other plates which, that are typical of this region, and that have now become part of the Mexican cuisine such as stuffed chili peppers covered with nutmeg sauce, tender pork in pibil sauce, in addition to juices, clay pot brewed coffee, yogurts and hand made tortillas.

4. And for dinner, the white meats are a must as are foul, fish, and shrimp. For starters, the chef offers 3 types of salads and 3 types of soups, such as the green salad with jicama and pineapple with a mandarin dressing and cottage cheese or the tarasca soup. All dishes are prepared with ingredients of the region, and this guarantees its freshness and quality.

5. “Sample a little of everything, and then return for what you like the best”. That is the motto that chef Miramontes tends to reply to all the diners when they ask for a dish recommendation, and that’s because everyone has their own particular palate.
